Keto Taco Soup

We haven’t put up a recipe since ‘Nam. We made this for dinner last night and new this was the perfect way to break the recipe post silence. This recipe is perfect for a quick dinner any time of the week. Using quality ingredients like grass fed ground beef or heritage pastured pork, bone broth, and low-carb veggies like zucchini, you can whip up a soup that is high in quality animal fats and nutrients and low in carbohydrates.

The key to this soup is not only the quality of the few ingredients, but the toppings! That’s what soup is really all about isn’t it? We throw on a generous helping of sour cream, cilantro, grass fed sharp cheddar, and fresh squeezed lime juice. Needless to say, this one is hard to stop eating. Lets get into how its made.


  • 1 large yellow onion
  • 4 cloves of garlic
  • 1 lb. of grass fed beef or pastured ground pork
  • 2 jalapenos (take the seeds out unless you want it spicy)
  • 2 medium zucchini
  • 1 28 oz. can of diced tomatoes
  • 6 cups of bone broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt (more to taste if you like it salty like me)
  • black pepper


  • sour cream
  • fresh squeezed lime juice
  • cilantro
  • grated grass fed sharp cheddar
  • diced jalepeno


  • Heat a tablespoon of quality fat like lard, butter, ghee, olive oil or coconut oil over medium heat. When the oil is shimmering sauté the onions for 10 minutes or until translucent. When the onions are done, stir in the garlic and cook for 2 minutes.
  • Add the ground beef or pork and jalapenos to the pan. When the meat is almost done (still a little pink left) add in the seasonings and zucchini. Cook for 5 more minutes until the zucchini softens up a bit
  • Add the can of tomatoes, including the liquid. Bring the soup to a boil then lower the head and simmer for 10 minutes until some of the liquid from the tomatoes evaporates. 5 or 10 minutes.
  • At this point just add the broth and simmer for another 5 minutes. While the broth is simmering chop up the cilantro, lime, grate the cheese, and get out the sour cream. Plate up and enjoy!
